AIP Coconut Caramel Cookie Bars

AIP Cookie Bars


I was a little kid when I first tried caramel, and I’ve been in love ever since. With caramel, that is. I try to eat healthy and avoid candy and all that stuff and blah blah blah… but when caramel is present I’m pretty sure wild horses couldn’t keep me from it.

Come to think of I’m not sure how wild horses could keep someone from anything. It’s not like horses are akin to guard dogs or anything like that. Anyway these delicious coconut-based bars are a great vehicle for the easy homemade maple syrup caramel on top. Enjoy!

AIP Coconut Caramel Cookie Bars

Ingredients
  • Base:
  • ¼ cup [url href=”https://www.amazon.com/Organic-Coconut-Anthonys-Certified-Gluten-Free/dp/B00BSZBEAG/ref=as_li_ss_tl?ie=UTF8&qid=1484591131&sr=8-1&keywords=anthonys+coconut+flour&linkCode=ll1&tag=coituppa-20&linkId=a65f275270df1ad33ff189160ffbc538″ target=”_blank”]coconut flour[/url]
  • 1 tablespoon maple syrup
  • ¼ cup softened coconut oil
  • Filling:
  • 2 cups [url href=”https://www.amazon.com/Organic-Shredded-Unsweetened-Anthonys-Gluten-Free/dp/B00LNURL94/ref=as_li_ss_tl?ie=UTF8&qid=1484591149&sr=8-1&keywords=anthonys+coconut+flakes&linkCode=ll1&tag=coituppa-20&linkId=2b7c08c867cca737ecd9f2a9854a8773″ target=”_blank”]unsweetened coconut flakes[/url]
  • ¼ cup maple syrup
  • ¼ cup softened coconut oil
  • Pinch salt
  • Caramel:
  • ½ cup maple syrup
  • ¼ cup coconut cream
  • Pinch salt
Instructions
Base:
  1. Combine all base ingredients in a bowl and mix well.
  2. Press evenly into a 8″x8″ glass baking dish.
Filling:
  1. Combine all filling ingredients.
  2. Evenly spread over crust in baking dish.
  3. Freeze until set.
Caramel:
  1. Meanwhile, combine all caramel ingredients in a small saucepan and mix well.
  2. Simmer until mixture coats a spoon when you stir the caramel, then simmer about 3-4 minutes more.
  3. Allow caramel to slightly cool.
  4. Evenly spread caramel over coconut layer in the baking dish and freeze until set and cooled.
  5. Cut into bars and enjoy.
