I love lemon in any form. When I was little my grandma would make lemon loaf cake. Lemonade was always my jam. Now I like lemon water, but I thought I’d mix it up a little and make scones!
These amazing scones are egg-free but you’d never know it. They’re luscious and lemony with a creamy frosting. The egg-free magic is brought to you by plantain flour, one of my favorite flours for eggless baking! It works perfectly and the results are always great.
Make these amazing scones for high tea!
- Scones:
- 1/3 cup [url href=”http://www.amazon.com/gp/product/B00B3COTYM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00B3COTYM&linkCode=as2&tag=coituppa-20&linkId=RBEJUCHGJKJGDGTY” target=”_blank”]coconut oil[/url] (solid, not melted)
- 1 green-tipped banana
- 1/3 cup [url href=”http://www.amazon.com/gp/product/B005P0LW66/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005P0LW66&linkCode=as2&tag=coituppa-20&linkId=QKBVE4MXBRPGASNL” target=”_blank”]maple syrup[/url]
- 1/3 cup lemon juice
- 1/2 cup [url href=”http://www.amazon.com/gp/product/B000F9ZM5Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000F9ZM5Y&linkCode=as2&tag=coituppa-20&linkId=VSD2O6VZ37JT7PIP” target=”_blank”]plantain flour[/url]
- 1/4 cup coconut flour (I only recommend [url href=”http://www.amazon.com/gp/product/B000KENKZ8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000KENKZ8&linkCode=as2&tag=coituppa-20&linkId=YV3D533IW555TNWO” target=”_blank”]Bob’s[/url] and [url href=”http://www.amazon.com/gp/product/B00BSZBEAG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00BSZBEAG&linkCode=as2&tag=coituppa-20&linkId=53LCCB3XZLUTEVYU” target=”_blank”]Anthony’s[/url])
- 1/2 teaspoon baking soda
- Frosting:
- 1/2 cup [url href=”http://www.amazon.com/gp/product/B00JB2QS7C/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00JB2QS7C&linkCode=as2&tag=coituppa-20&linkId=XY4NRZTNBSNPOTNL” target=”_blank”]coconut milk[/url]
- 3 tablespoons [url href=”http://www.amazon.com/gp/product/B00LNWR7YG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00LNWR7YG&linkCode=as2&tag=coituppa-20&linkId=6HY7A3RVOMFSGTSJ” target=”_blank”]tapioca starch[/url]
- 3 tablespoons [url href=”http://www.amazon.com/gp/product/B005P0LW66/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005P0LW66&linkCode=as2&tag=coituppa-20&linkId=QKBVE4MXBRPGASNL” target=”_blank”]maple syrup[/url]
- 2 tablespoons lemon juice
- 1/4 cup coconut flour
- Preheat oven to 350° F and grease a cookie sheet.
- Mash the banana with the coconut oil and maple syrup. Mix in the lemon juice.
- Add the plantain flour, coconut flour, and baking soda.
- Form into a 1/2″ thick disk on the baking sheet and cut into 6 triangles.
- Bake for 25-0 minutes.
- Cool.
- Mix all frosting ingredients.
- Frost cooled scones (You may not use all the frosting)

YUM! It even uses plantain flour! I love using plantain flour but there aren’t many recipes out there with it! I will be making these tonight!! Yum!

I’ve been missing a treat such as a scone. These were delicious even w/o the frosting. Do you have other AIP recipes with plantain flour? This is the first recipe I have seen using it. I give it 5 stars!
