AIP Orange Macaroons

Orange AIP Macaroons


Just when I think I can’t come up with another recipe that uses coconut, I come up with one. It’s basically my superpower. Like this:

“It’s a bird!! It’s a plane!! No… IT’S……..

COCONUT RECIPE GIRL!!”

Basically my identity without exaggeration.

Anyway, you know what goes great with coconut? Everything. Obviously.

But also oranges. I wanted to make some AIP macaroons but I didn’t want them to be just like every other AIP macaroon recipe on the planet, so I squeezed a fresh orange into the batter.. BOOM.. completely new recipe.

These are super-easy, crispy on the outside and soft and cookie-y (totally a word) on the inside, with yummy orange flavor. Enjoy!

Orange AIP Macaroons
Recipe Type: Cookies/Bars

Serves: 1 dozen
Ingredients
  • 1-1/2 cups shredded unsweetened coconut
  • 2 tablespoons [url href=”https://www.amazon.com/Organic-Coconut-Anthonys-Certified-Gluten-Free/dp/B00BSZBEAG/ref=as_li_ss_tl?ie=UTF8&qid=1484164841&sr=8-1-spons&keywords=anthony’s+coconut+flour&psc=1&linkCode=ll1&tag=coituppa-20&linkId=0eaf388a36418c8e27a0387dd3e16782″ target=”_blank”]coconut flour[/url]
  • 2 tablespoons gelatin
  • Juice of 1 fresh orange
  • 1/4 cup softened coconut oil
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. Grease a baking sheet with coconut oil.
  3. Mix together all ingredients in a large mixing bowl.
  4. Use a cookie scooper to drop heaping tablespoons of dough onto the baking sheet.
  5. Bake for 20-25 minutes.
  6. Cook and enjoy.

    I just discovered your website, and I am thrilled with your coconut superpowers!!! It really is the other white meat in my opinion. I can’t wait to give this recipe (and several others, including your RX bars) a try.

    Mmmmm I’m totally loving the tropical flavors of the coconut and orange combo in these cookies! I love all things coconut too, there are so many flavor variations you can do with it!
