Almond Flour Pancakes

Almond Flour Pancakes

Serves: 8 small pancakes
Ingredients
  • eggs – 4
  • maple syrup or honey – 2 teaspoons
  • blanched almond flour – 1 cup
  • salt – 1/2 teaspoon
  • baking powder – 2 teaspoons
  • cocoa powder – 2 teaspoons
Instructions
  1. In a small bowl, whisk together the eggs with maple syrup or honey. In another bowl, stir together the almond flour, salt, baking powder and cocoa powder. Mix the wet ingredients into the dry until the lumps are gone. Heat some coconut oil in a skillet and spoon on the pancakes as desired. Cook 2 minutes per side.
