I remember the first time I had paleo carrot cake.  It was actually a recipe from Make It Paleo by Bill Staley and Haley Mason.  It was delicious, and I have been in love ever since.  I loved the idea of putting a vegetable in dessert.  It practically makes it a salad.

I’ve had paleo carrot cake and paleo carrot cake muffins, but my goal with this recipe was to make a nutritious treat that is more portable than traditional carrot cake.  Perfect for potlucks or to bring to work.  If you want to share.  No judgement if you don’t ;).

This recipe has less than half a cup of maple syrup in it because it’s sweetened mostly with raisin paste.  Raisin haters, please don’t run! There are no whole raisins in this recipe, they only make the bars taste sweet.

Carrot Cake Bars (nut-free)

Serves: 9 servings
Ingredients
  • Bars
  • raisins – 1 cup
  • water – to cover raisins
  • carrots – 2 cups grated
  • apples – 2 cups grated
  • eggs – 3
  • coconut oil – 1/3 cup, melted
  • maple syrup – 1/4 cup
  • unsweetened coconut flakes – 1 cup
  • coconut flour – 1/3 cup
  • ground cinnamon – 1 teaspoon
  • ground nutmeg – 1/2 teaspoon
  • salt – 1/2 teaspoon
  • Frosting
  • canned full-fat coconut milk – 1 cup
  • maple syrup – 3 tablespoons
  • coconut flour – 1/4 cup
  • arrowroot starch – 1/4 cup
  • pure vanilla extract – 1/2 teaspoon
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place the raisins in a microwave-safe bowl and cover with water. Microwave 2 minutes. Let sit a minute.
  3. Meanwhile, mix together the remaining cake ingredients in large mixing bowl. Grease a 9 inch by 11 inch glass baking dish.
  4. Scoop the raisins into a mini food processor with 3 tablespoons of the liquid. Process until pureed. Add to the cake batter and mix well. Scrape into the prepared baking dish and bake for 35 minutes, or until it passes the toothpick test. Let cool.
  5. Mix together the frosting ingredients in a small bowl. Frost cake, cut into bars, and serve.

    What could I replace the coconut flakes with? They irritate my throat…all other coconut products are fine.

      You could try some finely chopped nuts or seeds to mimic the texture.
