Cassava Flour Waffles

This is one of those blog posts where I’m sitting here wondering, Why haven’t I done this before? Cassava flour is pretty much my favorite flour ever,  yet I’ve up until now failed to make a cassava flour recipe for one of my favorite breakfast foods, waffles!

Well, the wait is over, folks! These waffles are everything a good waffle should be; soft, fluffy, and a bit crispy. I’ll definitely be making this recipe again and again!

Cassava Flour Waffles

It’s funny; whenever I think of waffles I think about how my mom used to bake her amazing pancake batter in the waffle iron for perfect thick and fluffy waffles, pre-paleo. They were never crispy, though, because she didn’t have time to beat the egg whites. These waffles are crisp and perfect thanks to a couple scoops of collagen peptides; no egg beating required!

Serves: 4-5 waffles
Ingredients
  • 3 egg whites
  • 1 egg
  • 1/4 cup [url href=”http://www.amazon.com/Perfect-Hydrolyzed-Collagen-Peptides-Powder/dp/B015GBCSWK/ref=as_li_ss_tl?ie=UTF8&keywords=perfect%20supplements%20collagen&qid=1461692315&ref_=sr_1_1_a_it&sr=8-1&linkCode=ll1&tag=coituppa-20&linkId=444ecb72c21f27b422fb23456da7d897″ target=”_blank”]collagen peptides[/url]
  • 1/4 cup coconut oil, melted
  • 1 tablespoon honey
  • 1/2 cup [url href=”http://www.idevaffiliate.com/32360/idevaffiliate.php?id=104″ target=”_blank”]cassava flour[/url]
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Instructions
  1. Whisk the egg whites with the egg, collagen, coconut oil, and honey.
  2. Add the cassava flour, baking soda, and salt.
  3. Preheat a waffle iron.
  4. Cook the waffle batter by scant 1/4 cupfuls per manufacturer’s instructions. They cook fairly quickly.

    Thanks for the recipe! I made these tonight using Otto’s cassava flour and Great Lakes Collagen and they worked well. The only change I made was using just a small squeeze of honey rather than a full tablespoon. They do cook quickly so I watched them carefully after the first one. I got 4 waffles in a 5-heart shaped waffle maker. I ate them plain with eggs and bacon – it was so nice to have something to dip into my egg yolk 🙂

    Can these be made with no honey? And I don’t have collagen, what can I substitute with if needed?

      Yes you can make these without honey. Not sure on the collagen; you might be able to omit it but the waffles won’t be as crispy.

      A little bit of oil wouldn’t hurt; I sometimes don’t oil mine because it doesn’t stick easily.

    This recipe looks great! I don’t have collagen peptides. Would gelatin work instead?

      Not sure; you might be able to omit it but the waffles won’t be as crispy.
