Chocolate Avocado Smoothie

Chocolate Avocado Smoothie | Cook It Up Paleo


Perhaps I should have called this post “How to Get a 12 Year-Old to Eat an Avocado” or something like that because I just made it for Julia and she slurped it right up! I love it because it’s super-creamy and full of amazing fats. You don’t taste the avocado; it just adds a great richness. You’ll notice that I drizzle in the coconut oil at the end while the blender is running; I do this so that the coconut oil emulsifies into the smoothie and doesn’t solidify and clump up. This smoothie makes decadent breakfast, supplemented with some other protein source, or a great and filling snack any time of day! (if you try it at midnight, tell me; I even think it would be good then…)

 

Chocolate Avocado Smoothie

Serves: 1 serving
Ingredients
  • ripe banana – 1/2
  • avocado – 1/2
  • egg – 1
  • almond butter – 1 tablespoon
  • cocoa powder – 1 tablespoon
  • So Delicious coconut milk (or other milk of choice) – 1/2 cup
  • ice cubes – 4-5
  • coconut oil – 1 tablespoon, melted
Instructions
  1. In a blender combine banana, avocado, egg, almond butter, cocoa, milk and ice. Blend for 1-2 minutes. While the blender is running, drizzle in the coconut oil and whirl just a few seconds more. Pour into a glass and enjoy!
