Ever wonder if it’s possible to make a healthy cinnamon roll? I did. I looked up recipes and even concocted one of my own, but it was a lot of work and left a lot to be desired when it came to flavor. Then, it hit me. Why not make a plain cake with a cinnamon swirl? It would be easier and the texture would be better. Now we reap the results! This cake has a light texture, a sweet taste with a hint of nuttiness, and nice cinnamon swirl. Perfect with a cup of strong coffee!
- Cake:
- eggs – 4
- pure maple syrup – 1/4 cup
- almond butter – 2 tablespoons
- pure vanilla extract – 1 teaspoon
- canned full-fat coconut milk – 1/4 cup
- blanched almond flour – 1-1/2 cups
- baking powder – 1 teaspoon
- salt – pinch
- Cinnamon Swirl:
- pure maple syrup – 2 tablespoons
- coconut oil – 1 tablespoon, melted
- ground cinnamon – 1 tablespoon
- In a medium mixing bowl, combine eggs, 1/4 c. maple syrup, almond butter, vanilla and coconut milk and mix well with a whisk. In a large mixing bowl, combine almond flour, baking powder and salt and mix well. Stir wet ingredients into dry. Grease a 8″x8″ glass square baking pan with a bit of coconut oil. Pour in the batter. In a small bowl, use a fork to stir together the 2 T. maple syrup, coconut oil, and cinnamon for the topping. Drizzle this mixture over the top of the batter and use a butter knife to swirl. Bake at 350 degrees F for 30 minutes.

This recipe came out great! It might be my fav. new almond cake to make. I had to tweak the recipe a bit for the SCD diet but it still came out great!

just made this recipe in muffin tins. This is my first paleo baking and i must say, I am not dissappointed! Considering its gluten, sugar and dairy free, its a treat full of flavour!
