Easy Paleo Lemon Cake


I love my family. One of the things I love about it is that we all really enjoy spending time together, even if a hangout is a teensy bit short-notice. But we always need some dessert; so I love having quick recipes on hand.

Easy Paleo Lemon Cake

A lot of times we will make gluten-free brownies but I love this recipe because it’s something other than chocolate which is OK because it’s lemon; my second favorite flavor! Hope you enjoy this fluffy cake recipe!

  • 2 eggs

  • 1/3 cup lemon juice
  • 1/4 cup [url href=”https://www.amazon.com/Dr-Bronners-Whole-Kernel-Coconut/dp/B0108Y1QPU/ref=as_li_ss_tl?ie=UTF8&qid=1471457997&sr=8-2&keywords=dr+bronners+coconut+oil&linkCode=ll1&tag=coituppa-20&linkId=59170f948de21dcd7a7e085cc9cb5ebe” target=”_blank” rel=”nofollow”]coconut oil[/url], softened, or other oil for coconut-free option

  • 1-1/2 cups finely ground [url href=”https://www.amazon.com/Almond-Blanched-Anthonys-Certified-Gluten-Free/dp/B0055IRNAC/ref=as_li_ss_tl?ie=UTF8&qid=1471457953&sr=8-1&keywords=anthonys+almond+flour&linkCode=ll1&tag=coituppa-20&linkId=5fea81e03c5566e4cc138fdb9b329aa9″ target=”_blank” rel=”nofollow”]almond flour[/url] (I love Anthony’s brand)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon [url href=”https://www.amazon.com/Real-Salt-Pouch-26-Ounce-Bags/dp/B00269E482/ref=as_li_ss_tl?ie=UTF8&qid=1471458015&sr=8-2&keywords=real+salt&linkCode=ll1&tag=coituppa-20&linkId=f5c35ed53f96daf1060c0f2e566d780b” target=”_blank” rel=”nofollow”]salt[/url]
Instructions
  1. Preheat the oven to 350° and grease a 9″ cake pan.
  2. In a mixing bowl, combine the eggs, maple syrup, lemon juice, oil, and almond butter; mix well.
  3. Add the almond flour, baking soda, and salt; mix well.
  4. Transfer to the prepared pan.
  5. Bake for about 20 minutes, or until golden and a springs back to the touch.
  6. Let cool, slice, and serve. Enjoy this easy and delicious dessert!
