Paleo Chocolate Chip Muffins

- eggs - 5
- coconut oil - ⅓ cup, melted
- pure maple syrup - ⅓ cup
- coconut flour - ½ cup + 1 tablespoon
- arrowroot starch - ⅓ cup
- chocolate chips - ½ cup
- baking soda - ½ teaspoon
- raw apple cider vinegar - ½ teaspoon
- Preheat oven to 375 degrees Fahrenheit and line 7 muffin cups with paper muffin liners.
- In a large bowl, whisk the eggs. Stir in the coconut oil and maple syrup.
- Stir in the coconut flour and arrowroot.
- Mix in the chocolate chips.
- Add the baking soda and apple cider vinegar and mix well.
- Bake for 20 minutes, or until they pass the toothpick test.
