Banana Bread Bars (No Egg Whites)

Ingredients
  • overripe bananas - 3
  • egg yolks - 3
  • chia seeds - 2 tablespoons
  • blanched almond flour - 1-1/2 cups
  • coconut flour - 2 tablespoons
  • ground cinnamon - 1 tablespoon
  • baking soda - ½ teaspoon
Instructions
  1. Preheat oven to 375 degrees Fahrenheit and grease an 8 inch by inch glass baking dish coconut oil.
  2. Mash the bananas in a large mixing bowl and mix in the egg yolks and chia seeds. Let sit for 10 minutes.
  3. Stir in the almond flour, coconut flour, cinnamon, and baking soda.
  4. Scrape the batter into the prepared baking dish and bake for 30 minutes, or until the bread passes the toothpick test.
  5. Cut into squares and enjoy, preferably with softened butter.
