Double Chocolate Mocha Cookies

- eggs - 2
- coconut oil - ⅓ cup, melted
- maple syrup - ½ cup
- blanched almond flour - 1-1/2 cups
- coconut flour - 1 tablespoon
- tapioca starch - ½ cup
- instant coffee grounds - ⅓ cup
- raw cacao powder - ⅓ cup
- salt - ½ teaspoon
- baking soda - ¼ teaspoon
- dark chocoate - ½ cup chopped
- Preheat oven to 350 degrees Fahrenheit and grease a large baking sheet with some coconut oil.
- Whisk the eggs in a large bowl with the coconut oil and the maple syrup.
- Mix in the flours, instant coffee and cacao.
- Stir in the salt, baking soda, and chocolate.
- Drop heaping tablespoonfuls of batter onto the prepared baking sheet. Flatten out a bit a spoon.
- Bake for 15-20 minutes.
