Coconut Curry Paleo Mashed Sweet Potatoes

- sweet potatoes - 4, peeled and cubed
- curry powder - 2 teaspoons
- garlic powder - ½ teaspoon
- ground ginger - ½ teaspoon
- salt - to taste
- coconut oil - 1 tablespoon
- canned full-fat coconut milk - ¼ cup
- Boil the sweet potatoes until tender. Drain and mash with a potato masher. Stir in the spices with a fork, Then stir in the coconut oil and coconut milk
