Paleo Sugar Cookie Cutouts (with egg-free option)

- Cookie Dough:
- eggs - 2*
- coconut oil - ⅓ cup, melted
- honey or maple syrup - ½ cup
- pure vanilla extract - 1 tablespoon
- blanched almond flour - 2 cups
- coconut flour - ½ cup
- tapioca flour - 1 cup
- salt - ½ teaspoon
- baking soda - ½ teaspoon
- Frosting:
- coconut oil - ½ cup
- tapioca flour - ⅓ cup
- coconut flour - 2 tablespoons
- honey or maple syrup - 2 tablespoons
- pure vanilla extract - ½ teaspoon
- Toppings:
- chocolate chunks
- chopped macadamia nuts
- Preheat oven to 350 degrees Fahrenheit and and grease 2 cookie sheets with coconut oil.
- In a large mixing bowl, combine the eggs, oil, maple syrup or honey, and vanilla. Whisk together.
- Stir in the flours, baking soda, and salt.
- Dust the dough as needed with coconut flour as you roll in out, cut cookies as desired, and place on cookie sheets.
- Bake for 10-13 minutes.
- Transfer cookies to a platter and cool for about 20 minutes in the freezer while you make the frosting.
- Stir the frosting ingredients together.
- Frost cookies, top with chocolate chunks and macadamia nuts.
- *For egg-free, substitute ½ cup unsweetened applesauce for eggs. May need to bake cookies a bit longer.
