Chocolate Triple Berry Muffins

- eggs - 5
- canned full-fat coconut milk - ½ cup
- honey - ¼ cup
- fine coconut flakes - 1-1/2 cups
- tigernut flour - 1 cup
- baking powder - 2 teaspoons
- fresh strawberries - 1 cup chopped
- fresh blueberries - ½ cup
- fresh raspberries - ½ cup
- dark chocolate - ⅔ cup chopped
- Preheat oven to 375 degrees Fahrenheit.
- Whisk eggs with honey and coconut milk.
- Stir in coconut, tigernut flour, and baking powder.
- Fold in berries and chocolate.
- Scoop into paper-lined muffin cups (1 dozen).
- Bake 20-25 minutes.
