Ingredients
  • young thai coconut meat - meat of 1 coconut
  • canned full-fat coconut milk - 1 cup
  • fresh coconut water - ¼ cup
  • honey - 2 tablespoons
  • unflavored gelatin - 1 tablespoon
  • cold water - 2 tablespoons
  • fresh berries - for serving
Instructions
  1. Combine the coconut meat and coconut milk in a food processor and process until smooth.
  2. Pour into a small saucepan and add the coconut water and honey and stir well. Bring to a simmer over medium heat.
  3. Meanwhile, dissolve the gelatin in the water. As soon as the coconut mixture comes to a simmer, remove from heat and whisk in the dissolved gelatin.
  4. Transfer to serving dish or individual cups.
  5. Chill until set and serve with berries.
