Ingredients
  • dark chocolate chips - 1-1/2 cups
  • coconut oil - ⅓ cup
  • honey - ¼ cup
  • yellow plantains - 2, peeled and sliced
  • unflavored gelatin - 1 tablespoon
  • vanilla extract - ½ teaspoon
  • salt - ½ teaspoon
  • baking soda - pinch
Instructions
  1. Preheat oven to 375 degrees Fahrenheit and grease an 8"x8" glass baking dish with coconut oil.
  2. In a small saucepan, combine the chocolate, coconut oil, and honey. Melt over medium heat, stirring.
  3. In a high-powered blender or food processor, combine the plantains and chocolate mixture. Process on high speed until very smooth.
  4. Scrape into a bowl and stir in remaining ingredients.
  5. Scoop into the prepared baking dish and smooth top with a spatula.
  6. Bake for 25 minutes, or until they pass the toothpick test.
  7. Serve or warm or at room temperature.
