Ingredients
  • coconut oil - ⅔ cup, softened
  • honey - ½ cup
  • unsweetened applesauce - ¼ cup
  • pure vanilla extract - ½ teaspoon
  • tapioca starch - ¼ cup
  • sweet potato flour - 1 cup
  • unsweetened cocoa powder - ½ cup
  • salt - pinch
  • baking soda - ¼ teaspoon
Instructions
  1. Preheat oven to 375 degrees Fahrenheit and grease a large cookie sheet with some coconut oil.
  2. In a large mixing bowl, cream together the coconut oil and honey. Stir in the applesauce.
  3. Mix in the sweet potato and tapioca flours.
  4. Add the cocoa, salt, and baking soda and mix well. Drop by the heaping tablespoonful onto the cookie sheet and flatten out a bit.
  5. Bake for 15 minutes. Allow to cool mostly before removing from the pan; they are a bit fragile at first.
