Chewy Chocolate Cookies (paleo, nut-free, egg-free, seed-free)

- coconut oil - ⅔ cup, softened
- honey - ½ cup
- unsweetened applesauce - ¼ cup
- pure vanilla extract - ½ teaspoon
- tapioca starch - ¼ cup
- sweet potato flour - 1 cup
- unsweetened cocoa powder - ½ cup
- salt - pinch
- baking soda - ¼ teaspoon
- Preheat oven to 375 degrees Fahrenheit and grease a large cookie sheet with some coconut oil.
- In a large mixing bowl, cream together the coconut oil and honey. Stir in the applesauce.
- Mix in the sweet potato and tapioca flours.
- Add the cocoa, salt, and baking soda and mix well. Drop by the heaping tablespoonful onto the cookie sheet and flatten out a bit.
- Bake for 15 minutes. Allow to cool mostly before removing from the pan; they are a bit fragile at first.
