Quick "No Oats" Paleo Hot Cereal Mix

Ingredients
Mix:
  • flax seed meal - 1 cup
  • unsweetened coconut flakes - ½ cup
  • coconut flour - ½ cup
  • ground cinnamon - 1 tablespoon
  • ground nutmeg - 1 teaspoon
  • salt - ½ teaspoon
For each serving of hot cereal:
  • So Delicious coconut milk (or other milk of choice) - ⅔ cup
  • sweetener of choice - to taste
Add-in ideas:
  • raisins
  • dried apricots
  • apples
  • bananas
  • nut butter
  • berries
  • pumpkin
  • pure vanilla extract
  • dark chocolate
  • plain Greek yogurt
  • sliced almonds
  • pecans
  • jams and jellies
  • cocoa powder
  • dried cranberries
Instructions
  1. For the mix: In a large mixing bowl, mix together the flax, coconut, coconut flour, cinnamon, nutmeg and salt until well combined. Place in a labeled jar or plastic container with a tight-fitting lid. We store ours in the freezer so that the flax keeps well, but you could store in the pantry as well. For each serving of hot cereal: In a small saucepan, add ⅔ cup of your milk of choice along with ¼ cup of the dry mix and your sweetener of choice. Mix together and bring to a simmer. Cook until your desired thickness is reached. Enjoy with your desired add-ins.
