Beat the egg whites with an electric hand mixer until stiff. 2. Beat in the honey, vanilla and salt. 3. Fold in the coconut. 4. Grease a cookie sheet with some coconut oil. 5. Drop the cookies on the baking sheet and use a spoon to make a little well in the center of each one. 6. Place ½ to 1 teaspoon strawberry preserves in the center of each cookie. 7. Bake at 375 degrees F for 10 to 12 minutes.
