Paleo Banana Chia Pancakes

Ingredients
  • 3 green-tipped bananas
  • ⅓ cup coconut oil, melted
  • 2 eggs
  • 3 tablespoons chia seeds (I used Anthony's brand with great results - they're a great price too)
  • ⅓ cup coconut flour (I only recommend this one and this one)
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
Instructions
  1. In a mixing bowl, mash the bananas and mix in the coconut oil, eggs, and chia seeds.
  2. Stir in the coconut flour, cinnamon, and baking soda.
  3. Cook pancakes on a hot skillet until browned on each side.
