Doughnuts:
  1. Preheat oven to 350° F and grease a standard-sized doughnut pan.
  2. Mash the bananas in a bowl and mix in the coconut cream, coconut oil, and vanilla.
  3. Add the tapioca, coconut flour, cinnamon, and baking soda.
  4. Divide between 5 doughnut "cups" in the doughnut pan and bake for about 20 minutes.
  5. Let cool completely.
Frosting:
  1. Stir together all frosting ingredients and frost doughnuts.
  2. Doughnuts are best served after being chilled for a couple of hours (better texture).
Notes
This recipe is formulated for the 21 Day Sugar Detox; therefore it is not sweet. If you are not on the detox my tested variation is as follows: add ¼ cup coconut sugar to doughnut batter and increase coconut flour to ⅓ cup. Add 1-2 tablespoons of coconut sugar (or you could use a little stevia) to the frosting. Nutrition data calculated without added sugars.

Even if not on a sugar detox, it is very important to use green-tipped bananas in this recipe because they are what is replacing eggs. This is not your typical overripe banana recipe!
