In a small bowl, stir together the almond flour, baking powder, salt and cocoa. In another small bowl, whisk the egg with the maple syrup. Mix the dry ingredients into the wet. Grease a small Pyrex custard cup with coconut oil and pour the batter into it. Microwave on high for 1 min. and 40 sec. This makes one muffin but is easily multiplied; just make sure to microwave the muffins separately as they rise better that way.
