Instructions
  1. Preheat the oven to 350° F.
  2. Mash the banana in a mixing bowl. Mix in the sunbutter, maple syrup, and olive oil.
  3. Add the plantain flour, cassava flour, and salt. Mix well.
  4. Pat out on a cassava floured counter to ¼" thick and cut with a heart shaped cookie cutter.
  5. Transfer to a greased baking sheet and bake for 15-20 minutes.
  6. Cool and cookies.
  7. Melt the chocolate and drizzle over the cookies.
  8. Let sit until chocolate is set.
