  1. In a mixing bowl, whisk together the eggs, almond or coconut milk, butter or coconut oil, maple syrup, and collagen.
  2. Add the coconut flour, baking soda, and salt; mix well.
  3. Melt the coconut oil on a hot greased skillet over medium heat.
  4. Cook the pancakes in ⅓ cupfuls until golden brown on each side and cooked through.
