  1. Preheat the oven to 350° F and grease a baking sheet.
  2. In a mixing bowl, combine the coconut milk, olive oil, maple syrup, and vinegar; mix well.
  3. Add the flours, baking soda, and salt; mix well.
  4. Let sit a couple minutes to thicken.
  5. Drop by ¼ cupfuls onto the baking sheet into 6 mounds.
  6. Bake for 35-40 minutes, or until browned.
  7. Let cool (they'll have better texture) and enjoy!
