Ingredients
  • ⅓ cup pumpkin puree
  • 3 tablespoons coconut oil, softened
  • 2 tablespoons coconut sugar
  • 2 teaspoon psyllium husk powder (not flakes)
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut flour
  • ½ teaspoon baking soda
Instructions
  1. Preheat the oven to 350° F and grease a mini muffin pan.
  2. In a mixing bowl, combine the pumpkin puree, coconut oil, coconut sugar, and psyllium; mix well.
  3. Add the coconut flour and baking soda; mix well.
  4. Divide between 6 mini muffin cups.
  5. Bake for 25-30 minutes.
  6. Cool and enjoy.
