AIP Coconut Caramel Cookie Bars

- ¼ cup coconut flour
- 1 tablespoon maple syrup
- ¼ cup softened coconut oil
- ½ cup maple syrup
- ¼ cup coconut cream
- Pinch salt
- Combine all base ingredients in a bowl and mix well.
- Press evenly into a 8"x8" glass baking dish.
- Combine all filling ingredients.
- Evenly spread over crust in baking dish.
- Freeze until set.
- Meanwhile, combine all caramel ingredients in a small saucepan and mix well.
- Simmer until mixture coats a spoon when you stir the caramel, then simmer about 3-4 minutes more.
- Allow caramel to slightly cool.
- Evenly spread caramel over coconut layer in the baking dish and freeze until set and cooled.
- Cut into bars and enjoy.
