No Bake Paleo Granola

Ingredients
  • pecans - 1 cup, chopped
  • raw sunflower seeds - ½ cup
  • raisins - ¼ cup
  • unsweetened coconut flakes - ½ cup
  • ground cinnamon - to taste
  • ground nutmeg - 2 pinches
  • coconut oil - ½ cup, melted
  • vanilla extract - ¼ teaspoon
  • pure maple syrup - ¼ teaspoon
  • stevia to taste
Instructions
  1. In a large bowl, combine the pecans, sunflower seeds, raisins, coconut, stevia, cinnamon and nutmeg and mix well. Stir the vanilla and maple syrup into the melted coconut oil. Pour the coconut oil mixture into the dry ingredients and mix well. Spread out on a greased baking sheet and place in the freezer for 5 minutes. Use a metal spatula to break up the pieces and store in an airtight container in the fridge (if you don't devour it all first!).
