Fudgy Plantain Brownies (Egg-Free, Nut-Free)

Ingredients
  • dark chocolate - 1 bar (3 oz.)
  • cocoa powder - ¼ cup
  • coconut oil - 3 tablespoons
  • canned full-fat coconut milk - 2 tablespoons
  • pure maple syrup - ⅓ cup
  • pure vanilla extract - 1 teaspoon
  • green plantain - 1, peeled and sliced
  • baking soda - ¼ teaspoon
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease an 8 inch by 8 inch glass baking dish with a bit of coconut oil.
  3. In a small saucepan, combine the chocolate, coconut oil, coconut milk, maple syrup, cocoa powder, and vanilla. Melt, stirring, over medium heat. Remove from heat.
  4. Place the plantain in a food processor and pour the chocolate mixture over. Process until smooth.
  5. Add the baking soda and process until mixed.
  6. Pour the batter into the baking pan and bake for 25 minutes.
  7. Let cool a few minutes and enjoy!
