Banana Bread Pancakes Are the kids missing pancakes? Whip out this recipe! It’s a cinch to make in the blender, and everyone will love the fluffy pancakes that result, which are reminiscent of banana bread. This recipe is sweetened only with fruit, so it’s low in sugar. Eat up!

Ingredients
  • 1 very ripe banana, peeled
  • 2 eggs
  • ½ teaspoon pure vanilla extract
  • ¾ cup blanched almond flour
  • ¼ teaspoon baking soda
  • ½ teaspoon apple cider vinegar
  • 1 teaspoon ground cinnamon
  • Dash sea salt
  • Dash ground nutmeg
  • Coconut oil for griddle
  • Butter, finely chopped raw pecans, and pure maple syrup, for serving
Instructions
  1. Preheat a nonstick electric griddle to 350 degrees Fahrenheit.
  2. To a blender, add the banana, eggs, and pure vanilla extract.
  3. Blend on high for about 20 to 30 seconds, or until well mixed and slightly frothy.
  4. Add in the almond flour, baking soda, apple cider vinegar, cinnamon, sea salt, and ground nutmeg.
  5. Blend on high for 20 to 30 seconds more, or until well mixed.
  6. Pour batter into a medium-sized mixing bowl.
  7. Grease the hot griddle with a bit of coconut oil.
  8. Ladle the pancake batter onto the griddle by tablespoonfuls.
  9. Cook 1-2 minutes, then flip with a pancake turner and cook 1-2 minutes more, or until golden brown.
  10. Serve with butter, pecans, and drizzle of maple syrup.
