Hey everyone! I am Alexandra, Alex for short, and I am very excited to be guest posting here today.When Heather asked if I’d guest post, I know exactly what recipe to share. If you remember, she pulled together this amazing Gut-Healing Gelatin Recipes, and this recipe is a perfect continuation of this great list.

Lemon Gummies - Guest Post from Alex of Don't Eat the Spatula | Cook It Up Paleo

One of my most favorite desserts pre-paleo, is lemon bars. When I came up with this recipe, they reminded me so much of them, I just had to share it. This recipe, like many of mine, follows the Autoimmune Protocol (AIP).

Lemon Gummies

Serves: 1-1/2 cups
Ingredients
  • 1/3 cup fresh squeezed lemon juice
  • 2/3 cup [url href=”http://www.amazon.com/gp/product/B001HTJ2BQ/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B001HTJ2BQ&linkCode=as2&tag=coituppa-20&linkId=AWBRKMNUERR6TWAH” target=”_blank”]coconut milk[/url]
  • ¼ cup fresh squeezed orange juice
  • ¼ teaspoon [url href=”http://www.amazon.com/gp/product/B005GXG8S4/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005GXG8S4&linkCode=as2&tag=coituppa-20&linkId=UHJDE3DPWHWCT7DT” target=”_blank”]lemon extract[/url] (optional)
  • 1/8 teaspoon [url href=”http://www.amazon.com/gp/product/B000WR4LMY/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000WR4LMY&linkCode=as2&tag=coituppa-20&linkId=6RPXO3BQGGNNRKWH” target=”_blank”]turmeric[/url]
  • 2 tablespoons [url href=”http://www.vitalproteins.com/collagen/pasture-raised-collagen-peptides.html?acc=82aa4b0af34c2313a562076992e50aa3″ target=”_blank”]collagen[/url]
  • 4 tablespoons [url href=”http://www.vitalproteins.com/collagen/pasture-raised-collagen-protein-gelatin.html?acc=82aa4b0af34c2313a562076992e50aa3″ target=”_blank”]gelatin[/url]
Instructions
  1. Combine lemon juice through turmeric in a sauce pan and turn burner on low.
  2. Whisk in collagen and gelatin as it warms. Stir until fully combine.
  3. Remove from heat and pour into your favorite molds.
  4. Place in a fridge for at least an hour to cool and firm up.

    Oh these look yummy! Was wondering if I can sub extra gelatin for the collagen as I don’t have any on hand.
    And WHERE did you get those awesome Superman molds?!? My hubby and kids would LOVE a “Superman” gummy!!!

      Hey Sabrina! It’s Alex here. You can just leave out the collagen, no need to add more gelatin. The collagen is just want makes them super. ;-). Aren’t they the best molds? I actually picked them up at a random comic book store when I was on one of my vacations. I bet you could find them online somewhere though.
