Low Carb Chocolate Muffins


Ah February.  For most, this is the month of Valentine’s day, but for my family, it’s also the month of birthdays! It’s my birthday this month, by brother’s, my sister’s, my dad’s, my grandma’s, my cousin’s, and even our dog’s!  So the fact that it’s also Valentine’s is a bit of an afterthought in our house.

But thankfully chocolate desserts, a staple on Valentine’s Day, are also an awesome birthday treat! We almost always have some kind of chocolate cake at our family birthday party.

Low Carb Chocolate Muffins

It’s on the heels of January and my first-ever 21 Day Sugar Detox, so I’m working to keep my sugar intake a little bit lower.  This recipe is perfect because it’s moist, cakey, and fluffy while also being free of added sugars; stevia is the only sweetener!

Hope you like these chocolate muffins as much as I do! They’d be the perfect Valentine’s or birthday treat, especially with some whipped coconut cream!

Low Carb Chocolate Muffins

Ingredients
  • 3 large eggs (use 4 eggs if your eggs are small)

  • 1 tablespoon vanilla
  • 20-30 drops [url href=”http://www.amazon.com/gp/product/B001K2KR46/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B001K2KR46&linkCode=as2&tag=coituppa-20&linkId=Z65WOFBTDIO4WNGR” target=”_blank”]liquid stevia[/url]

  • 1/3 cup coconut flour (I only like [url href=”http://www.amazon.com/gp/product/B000YF99GM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000YF99GM&linkCode=as2&tag=coituppa-20&linkId=KAEEFGXIRVWB3NDO” target=”_blank”]Bob’s[/url] and[url href=”http://www.amazon.com/gp/product/B00BSZBEAG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00BSZBEAG&linkCode=as2&tag=coituppa-20&linkId=2USDPUZQ7F5OIC4O” target=”_blank”]Anthony’s[/url])
  • 1 tablespoon [url href=”http://www.amazon.com/gp/product/B002RWUNYM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B002RWUNYM&linkCode=as2&tag=coituppa-20&linkId=B3EGSAKXSDPYQLSQ” target=”_blank”]psyllium husk powder[/url]
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon [url href=”http://www.amazon.com/gp/product/B003Y7A6PA/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B003Y7A6PA&linkCode=as2&tag=coituppa-20&linkId=5IXQAWSPG3PKKPAC” target=”_blank”]apple cider vinegar[/url]
Instructions
  1. Preheat the oven to 350° F and grease a muffin pan.
  2. Whisk the eggs with the butter, coconut cream, vanilla, and stevia.
  3. Add the cocoa, coconut flour, psyllium, and salt.
  4. Mix in baking soda and apple cider vinegar.
  5. Divide between 5 muffin cups.
  6. Bake for 20-25 minutes.

    A really good muffin. Fluffy, moist. I doubled the recipe and got 12 large muffins”. Also added 4 tablespoons truvia, used Hershey’s special dark cocoa and 1/3 cup dark chocolate chips. I also used aluminum foil cupcake liners cause otherwise always stick in paper liners. I will add in my baking rotation.

    Well I tried to post and it glitched and told me I had already posted so here I go again…

    I really like this recipe however I used 3/4 cup Splenda. And as an fyi for the one that said there was more cocoa powder than coconut flour, coconut flour goes a long way in a recipe.

    The texture is excellent!

    I love this recipe! BUT I used Splenda instead (3/4 cup).

    Good texture. And for those not aware, coconut flour really goes a long way so I would be Leary of a recipe that required more coconut flour than cocoa.

    Well this was a total waste of time and expensive ingredients. I was very skeptical of a recipe in which more cocoa powder than flour was used and a tiny quantity of sweetener. I was correct, the raw dough was extremely bitter and unfixable no matter how much more stevia I added. Did you get the measurements wrong? Did you mean some sort of sweetened hot chocolate powder instead of actual cocoa powder? I followed your recipe exactly and they turned out completely inedible. Really disappointed.

      So sorry they didn’t work for you. Stevia isn’t super sweet; adding some erythritol might help.

    My mom used to buy the giant Costco chocolate muffins and I used to love them for breakfast! These muffins look divine and perfect with a cup of coffee!!
