Yield: 1 muffin
Ingredients
For Each Muffin Recipe:
- blanched almond flour - ¼ cup
- salt - pinch
- baking powder - ½ teaspoon
- egg - 1
Banana Bread Muffin:
- banana - ¼, mashed
- ground cinnamon - ¼ teaspoon
- pure maple syrup - 1 teaspoon
Cinnamon Bun Muffin:
- ground cinnamon - 1 teaspoon
- pure maple syrup - 1 teaspoon
Blueberry Muffin:
- blueberries - few
- pure maple syrup - 1-2 teaspoons
Apple Muffin:
- apple - 2 tablespoons chopped
- ground cinnamon - ¼ teaspoon
- pure maple syrup - 1-2 teaspoons
Chocolate Muffin
- cocoa powder - 1 tablespoon
- pure maple syrup - 1 tablespoon
Sandwich Bread:
- replace 1 tablespoon almond flour with 1 tablespoon flax meal
- cocoa powder - ½ teaspoon
- pure maple syrup - ¾ teaspoon
- sesame seeds - optional, for top
Instructions
- In a small bowl, combine the almond flour, salt, baking powder and cinnamon or cocoa powder if your chosen muffin recipe calls for it. In another bowl, whisk the egg with the allotted amount of maple syrup. For the banana bread muffin, stir in the mashed banana. Stir the dry ingredients into the wet with a fork until smooth. For the apple muffin, fold in the chopped apples now. Grease a small pyrex custard cup or microwave safe ramekin with coconut oil of nonstick spray. Pour in the batter. For the blueberry muffin, arrange the blueberries on the top of the muffin batter. If making a burger bun, you may want to sprinkle with a few sesame seeds. Microwave 90 seconds. Let cool a few seconds, remove with a butter knife and enjoy!


I absolutely love this post. It is my go-to for this base. I actually sub 1/2 coconut and half almond flour (and have used all coconut before)..great base recipe!! Love!

P.S. I’ve always hated almond flour, but I tried it in this recipe and it honestly tasted like a muffin from Starbucks, not a “replacement.” SO good!!! 😀
