I sent out a poll on my Facebook page a couple days ago:
Within 24 hours, I had lots of votes. The race was close, but the No Bake Chocolate Chip Cookies eventually won the day with 12 votes to 10 for the meatballs.
I must admit that you who voted chose well. These no bake chocolate chip cookies are simply amazing, and so easy to make. And they only have 5 ingredients! The cookie base has no added sugar; the sweetness of the chocolate chips determines the sweetness.
These high in healthy fats from the almond butter and coconut flakes and coconut oil. An energizing treat for sure!
I could almost see making these in an 8 by 8 glass baking dish. No-bake blondies, anyone?
- almond butter – 2/3 cup
- coconut oil – 1/3 cup, melted
- coconut flakes – 1 cup
- pure vanilla extract – 1 teaspoon
- semi sweet chocolate chips – 1/2 cup chopped
- Mix all ingredients together in a bowl and drop by spoonfuls onto a cookies sheet.
- Freeze for 20 minutes, or until set.
- Store in an airtight container in the fridge.
