I love making treats that are relatively guilt-free. These muffins are only fruit-sweetened. I am known in my family for not making things sweet enough, but my family, including my teenage brother, loves these muffins.
I have been making so many treats for my blog lately, they are starting to clutter up our fridge. I actually just gave a friend a ton of muffins and cookies the other night, just to get them out the house. #foodbloggerprobs
These muffins are a really hearty and delicious treat or quick breakfast. I love that they have that bran flavor from the flax, and the dried cherries really make it.
Make sure to get high-quality organic dried fruit for this recipe; the apples and cherries are the stars of the show.
- eggs – 5
- applesauce – 1 cup
- coconut oil – 1/4 cup, melted
- pure vanilla extract – 1 teaspoon
- blanched almond flour – 1-1/2 cups
- coconut flour – 2 tablespoons
- flaxseed meal – 1/2 cup
- arrowroot starch – 1/4 cup
- dried apples – 1 cup chopped
- dried cherries – 1/2 to 3/4 cup
- ground cinnamon – 2 teaspoons
- ground nutmeg – 1/4 teaspoon
- carob powder – 1/2 tablespoon
- baking soda – 1/2 teaspoon
- raw apple cider vinegar – 1/2 teaspoon
- Preheat oven to 375 degrees Fahrenheit and line 12 muffin cups with paper muffin liners.
- Whisk the eggs in a large mixing bowl. Add the applesauce, coconut oil, and vanilla and mix well.
- Stir in the almond flour, coconut flour, and arrowroot.
- Add the apples, cherries, cinnamon, nutmeg, and carob. Mix well.
- Stir in the baking soda and apple cider vinegar.
- Scoop into the prepared muffin cups.
- Bake for 25 minutes, or until they pass the toothpick test.
