“It’s so fluffy I’m gonna die!!” Yes, I just made that reference (comment below if you know what movie that’s from!)
Whether or not you get that reference, I think you’ll understand that that quote definitely sums up how I feel about these pancakes. I set out to make a 21DSD-approved pancake recipe with some chia for extra nutrition, and ended up with some of the fluffiest pancakes that I’ve ever made (right up there with the chestnut pancakes, of course)
I absolutely love the little bit of texture that the chia seeds bring to these pancakes. The bananas are greenish, so they don’t overpower these pancakes. I like mine plain as a snack, but they’re also delicious with homemade sunbutter and extra sliced bananas.. with bacon on the side of course!
Or you could just top them with a bit pat of butter… because we all know that butter isn’t a carb! ( We all know where that’s from, right?)
- 3 green-tipped bananas
- 1/3 cup [url href=”http://www.amazon.com/gp/product/B0108Y1QPU/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B0108Y1QPU&linkCode=as2&tag=coituppa-20&linkId=Q2FL6UQM525MCPA2″ target=”_blank” rel=”nofollow”]coconut oil[/url], melted
- 2 eggs
- 3 tablespoons chia seeds (I used [url href=”http://www.amazon.com/gp/product/B00MEUUBZI/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00MEUUBZI&linkCode=as2&tag=coituppa-20&linkId=QXP5BQ4IN6PGI7OW” target=”_blank”]Anthony’s brand[/url] with great results – they’re a great price too)
- 1/3 cup coconut flour (I only recommend [url href=”http://www.amazon.com/gp/product/B000KENKZ8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000KENKZ8&linkCode=as2&tag=coituppa-20&linkId=JZ2MIWQB63UU7EYP” target=”_blank” rel=”nofollow”]this one[/url] and [url href=”http://www.amazon.com/gp/product/B00BSZBEAG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00BSZBEAG&linkCode=as2&tag=coituppa-20&linkId=6QZ4UJ4TQIGG6TRL” target=”_blank” rel=”nofollow”]this one[/url])
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- In a mixing bowl, mash the bananas and mix in the coconut oil, eggs, and chia seeds.
- Stir in the coconut flour, cinnamon, and baking soda.
- Cook pancakes on a hot skillet until browned on each side.

Hi, this was actually a really bad recipe. I managed to save it by adding 2 extra eggs and some almond milk. The original batch was so dry it was more like cookie dough. The addition of the eggs and liquid turned it to a batter which is what you need for pancakes.
If i’m missing something here then please let me know.
The upside of this is that the taste was wonderful and I’ll definitely adapt the recipe with the same ingredients.
I’ve also had to opt out of your blog as I was getting spammed far too much for comfort.

I was really looking forward to these. Made them this morning for breakfast and the ‘batter’ was far too dry. As soon as you add chia seeds to wet anything they start to leach the moisture. To make it anything close to a batter I could drop in to a pan I had to add two more eggs and some coconut milk. They turned out OK, but far too fussy and dry. I won’t be making these again I’m afraid 🙁

I retested these this morning following my recipe exactly and they turned out perfectly for me; coconut flour pancake batter is naturally thicker, but it’s supposed to be.
