It’s funny; this is the first “Halloween candy” post that I’ve ever done in four years in the blogging space. Reason being that our family never really did Halloween. For me, Octobers are about eating too much pumpkin custard, watching Packer football, wearing fuzzy sweaters, and prepping for the Thanksgiving deer hunting season. The only trick-or-treaters we get at our out-in-the-boondocks home are raccoons and squirrels fattening up for the long Wisconsin winter.
So while fun-size Butterfinger candy bars don’t remind me of dressing up like my favorite Disney character, they do remind me of my piano lesson days when I would get a piece of candy after a lesson. I always chose Butterfingers; they were so sweet and buttery and amazing; I loved them.
My Paleo Butterfingers are made with coconut sugar and sunflower seed butter; and they satisfy my craving for something sweet and nostalgic. Plus there’s no candy thermometer required!

- Line a standard-sized loaf pan with some foil and grease with a little coconut oil or ghee.
- In a saucepan over medium heat, melt the ghee. Add the coconut sugar and sunflower seed butter and stir. Cook and stir constantly until the mixture becomes hot, sticky, and gooey. This shouldn’t take to long and don’t burn it!!
- Evenly spread into the prepared loaf pan and pop it in the freezer for a couple minutes.
- Cut into squares while it’s still a bit soft.
- Pop back into the freezer while you melt the chocolate with the coconut oil in the microwave.
- To coat the candy in chocolate, use a spoon to place a piece of candy in the bowl with the chocolate and stir it around to coat.
- Remove from the chocolate and place on a plate. Repeat until all the candy is coated. Sprinkle top with a bit of sea salt.
- Put in the freezer until firm.
- Store in an airtight container in the fridge.
