February is birthday month in my family; My twin brother and I are going to be 20 (!!!) and my little sister is going to be 16! I remember when I turned 16 and I thought I was sooooo old and mature. And so now I guess my little sister is old and mature as well. Anyway, my little sis can’t eat coconut flour but I wanted to make her a dessert for her birthday that she’d enjoy, and who doesn’t love caramel brownies?
These have a slightly cakey texture with the delicious sweet frosting. Hope you love them as much as we do!
- Caramel
- ½ cup maple syrup
- ¼ cup coconut cream
- Pinch salt
- Brownies
- 1 egg
- ⅓ cup Anthony’s Goods [url href=”https://www.amazon.com/Organic-Anthonys-Certified-Gluten-Free-Non-GMO/dp/B00F7SU64K/ref=as_li_ss_tl?ie=UTF8&qid=1486680345&sr=8-1&keywords=anthony’s+cocoa&th=1&linkCode=ll1&tag=coituppa-20&linkId=666cb32da79a82e82de3344c5610424b” target=”_blank” rel=”nofollow”]Cocoa Powder[/url]
- ½ cup maple syrup
- ⅓ cup coconut oil
- 4 tablespoons Anthony’s [url href=”https://www.amazon.com/Organic-Tapioca-Anthonys-Certified-Gluten-Free/dp/B00VQO4YJC/ref=as_li_ss_tl?ie=UTF8&qid=1486680359&sr=8-1&keywords=anthony’s+tapioca&linkCode=ll1&tag=coituppa-20&linkId=25dfa4d1d474b4419c34f0171deddcf0″ target=”_blank” rel=”nofollow”]Tapioca Starch[/url]
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- Combine all caramel ingredients and a saucepan and simmer for 10-15 minutes, or until caramel coats back of spoon. Remove from heat and allow to cool.
- Combine egg, cocoa, maple syrup, and coconut oil in a mixing bowl and mix well.
- Add the tapioca, salt, and baking soda and mix well.
- Transfer to a greased 8″x8″ glass baking dish and bake for about 20 minutes.
- Cool, top with caramel.
- Slice and serve.

Can the cocoa powder be substituted with the same measurements of Carob powder? Also, any suggestions for substituting the coconut cream? I have almonds, cashews, and pecans I can cream in the vitamix. But, I’m not sure what nut flavor would work best with this recipe and your input would be greatly appreciated 🙂 Thanks again for your coconut-flour free recipes! You’re a God-send to my son, and you’ve never even met him. Please remember that on those tough days <3

I baked them at 350. Super delicious. I’m a good cook, but not much of a baker, so my husband was elated. These were great. Great texture and great flavor. Thanks for all your recipes Heather. They are so helpful to people with gut health issues. Keep ’em coming. 🙂

Can I sub potato starch for the tapioca?

I would think so; arrowroot starch would work as well.
