I have a secret to share (pinky promise): This paleo chocolate cheesecake with peppermint filling is not a cheesecake. Well actually it is. It’s kind of not though.
The reasons for this are:
There is no cheese in this recipe…
…But more importantly, this is actually a giant peppermint patty. For reals.
This giant peppermint patty is so giant that it can be cut into slices!
Just try telling me that that ↑↑↑ doesn’t look like a peppermint patty.
At this point I must say that the I was inspired to make this be Audrey over at Unconventional Baker – her vegan cheesecakes make me drool. Literally.
Before this I’ve never actually made a cashew cheesecake before. I know, crazy, but I can assure you that after this, I will be making cashew cheesecakes much more often than is suggested for general health.
If you’re like me, you have lots of childhood memories of eating York peppermint patties. Probably too many lol. This cashew cheesecake with a chocolate cookie crust and chocolate ganache is my way of recreating this old favorite. It does not disappoint and I may have eaten a few bites with my breakfast this morning. But shhhh; that’s a secret too 😉
- Chocolate Cookie Crust:

- Dash salt
- Filling:
- 3 cups [url href=”http://www.amazon.com/gp/product/B005OYMJ7E/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005OYMJ7E&linkCode=as2&tag=coituppa-20&linkId=RDZFMWTMURQ7IXLC” target=”_blank” rel=”nofollow”]raw cashews[/url], soaked overnight and drained
- 1/2 cup [url href=”http://www.amazon.com/gp/product/B005P0LW66/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B005P0LW66&linkCode=as2&tag=coituppa-20&linkId=SZHFEP5QPXJA5Y66″ target=”_blank” rel=”nofollow”]maple syrup[/url]
- 1/2 cup [url href=”http://www.amazon.com/gp/product/B00B3COTYM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00B3COTYM&linkCode=as2&tag=coituppa-20&linkId=3EL5TYWOXYJ46CWL” target=”_blank” rel=”nofollow”]coconut oil[/url], melted
- 1 tablespoon lemon juice
- 1 to 1-1/2 teaspoons [url href=”http://www.amazon.com/gp/product/B001E95KLU/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B001E95KLU&linkCode=as2&tag=coituppa-20&linkId=BOFQRJ6MI4GEB3JF” target=”_blank” rel=”nofollow”]peppermint extract[/url]
- Chocolate Ganache:
- 3.5 oz [url href=”http://www.amazon.com/gp/product/B004WZ4CLW/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B004WZ4CLW&linkCode=as2&tag=coituppa-20&linkId=AMNFVETX3AAUPOPL” target=”_blank” rel=”nofollow”]dark chocolate[/url], chopped
- 1/4 cup [url href=”http://www.amazon.com/gp/product/B00B3COTYM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00B3COTYM&linkCode=as2&tag=coituppa-20&linkId=3EL5TYWOXYJ46CWL” target=”_blank” rel=”nofollow”]coconut oil[/url]
- In a food processor, combine all crust ingredients and process until a course dough forms. Press into a springform pan.
- Rinse out the food processor and add all filling ingredients to it. Process until super-smooth. Evenly spread into the cookie crust.
- Chill overnight.
- In a saucepan over low heat, melt together the chocolate and coconut oil.
- Spread over cheesecake and freeze until set.
- Chill in the fridge until serving.
- Slice with a sharp knife that has been run under hot water.
