Paleo Meringues with Chocolate Chips

Serves: 4 dozen
Ingredients
  • egg whites – 2
  • cream of tartar – pinch
  • salt – pinch
  • pure vanilla extract – 1 teaspoon
  • pure maple syrup – 1/2 cup
  • mini chocolate chips – 1/2 cup
Instructions
  1. Preheat oven to 200 degrees Fahrenheit and line 2-3 baking sheets with parchment paper. Add the egg whites, cream of tartar, and salt to a large metal mixing bowl. Beat with a clean hand mixer until soft peaks form. Beat in the vanilla extract Gradually beat in the maple syrup, 1-2 tablespoons at a time, beating well after each addition. Continue beating until glossy, stiff peaks form. Scoop mixture into a gallon Ziploc bag and cut a little corner off the bag. Pipe 1-1/2 inch diameter cookies onto the baking sheets, about 1/2 inch apart. Bake for 2 hours. Turn oven off and let the meringues rest in the oven for about 2 hours, or until crispy.

    This sounds good and I will be making these but I need to know the carbs and cal’s per serving. I lost 30 pounds eating the Paleo way and I love my sweets but I have to watch how much do to having diabetes.
