Sorry…..zoned out there for a minute.  Seriously though, I’ve tried more paleo roll and biscuit recipes than I can admit on a public forum.  Very few lived up to my family’s high standards though.

These cassava flour rolls were gone pretty quick.  The key is delicious Otto’s Cassava Flour.  Seriously, this flour is pretty much the holy grail of paleo baking.  It’s not heavy light nut flours, not gummy like starches, and works so well in baked goods.   And who doesn’t want to make a batch of rolls that actually TASTE like rolls?? No sane person, that’s who.  Do yourself a favor and get some cassava flour.  You’ll thank me later.

Cassava Rolls
Recipe Type: Bread

Total time: 1 hour 10 mins
Serves: 8 rolls
Cassava Rolls By Heather Resler March 9, 2015 Prep Time : 40 minutes Cook Time : 30 minutes Yield : 8 rolls Allergens : egg, FODMAP, sugar Nutrition facts :
Ingredients
  • warm water – 1/3 cup
  • active dry yeast – 2-1/2 teaspoons
  • honey – 1 tablespoon
  • olive oil – 1/4 cup
  • eggs – 4
  • cassava flour – 1-1/4 cups
  • coconut flour – 1/4 cup
  • salt – 1/2 teaspoon
Instructions
  1. Mix the water with the yeast, honey, and oil. Whisk in the eggs.
  2. Add the flours and salt and mix well.
  3. Form into 8 rolls (will be sticky) and place in a greased 9 inch by 13 inch glass baking dish.
  4. Let rise 30 minutes.
  5. Bake at 350 degrees Fahrenheit for 30 minutes.

    Hi Heather,
    Can you tell me if I cook with manioc flour (which is supposed to be cassava flour) does it require extra water. I tried making these rolls and the dough was more like a crumble. Only thing I subbed was manioc flour for cassava as cannot find it here in Australia. I can import it but a kilo then becomes $56, a bit pricey for flour.Hoping you can help.

      I’ve never used anything that was labeled as manioc flour, so I’m not sure if it’s the same. I use Otto’s brand cassava and I think Pantry Innovations distributes Otto’s to Australia.

    Okay, mine don’t look anything like that, they look like piles of poop. I checked my amounts four times. There is no way I could roll them into balls. I had to scoop them with a greased ice cream scoop. They are not rising even though I got the yeast to foam a bit. What do you think I did wrong? Is there a misprint here? I am waiting to put them in the oven, they have ten more minutes to rise (not rising, spreading)

      Your eggs may have been bigger than mine or if you didn’t use Otto’s Cassava things might have been more liquidy.

    Coconut flour doesn’t like me! Can I substitute ground flax?

      You probably could; but you’ll need to use more flax than you would coconut flour. Add it until you get a dough that is thick enough to make the rolls out of. It won’t be exactly the same, but it would probably be good.

      You’ll have to add some baking soda and omit the rising time. I would probably omit the water as well and add some applesauce. I haven’t tried it so I can’t guarantee results; but let me know how it goes!
