Ingredients
- egg yolks – 6
- pure maple syrup – 6 tablespoons
- ground nutmeg – 1 tablespoon
- pure vanilla extract – 1 teaspoon
- canned full-fat coconut milk – 3 cups
- egg whites – 6
- whipped cream – optional
Instructions
- In a large mixing bowl, beat the egg yolks with a hand mixer until light and lemon-colored. Beat in the maple syrup, nutmeg, vanilla, and coconut milk. Chill this mixture until right before serving. Before serving, use a clean hand mixer to beat the egg whites until stiff. Fold the egg whites into the eggnog. Serve with whipped cream, if desired, and a sprinkle of nutmeg.
