Ever want cookies on a really hot day? But who wants to heat up the house with the oven? It’s already hot enough! Make these monkey cookies! They’re ‘baked’ in the freezer, so no heating the house up! They’re great for people with egg allergies, because they contain none, and for kids who want to lick the bowl, for the same reason! Mom likened them to a banana split in a cookie!
This recipe was inspired, as usual, by my Grandma R.’s awesome cooking. The recipe she used called for oatmeal, peanut butter and applesauce, but I made them paleo by subbing coconut, walnuts, sunflower seed butter, and another 1/2 banana for want of applesauce. You can use almond butter if you don’t have/don’t want to make sunflower seed butter. Enjoy!
- ripe bananas – 3-1/2
- unsweetened coconut flakes – 1 cup
- walnuts – 1 cup finely chopped
- sunbutter – 1/4 cup
- pure vanilla extract – 1 teaspoon
- ground cinnamon – pinch
- cocoa powder – 1/4 cup
- pure stevia extract – pinch
- Mash the bananas in a large mixing bowl and stir in the remaining ingredients. Drop on greased cookie sheets and freeze until hard, about 2 hours. Transfer to a big Ziploc bag and store in the freezer.
