2 Minute Coconut Flour Bread
Recipe Type: Bread

Prep time: 1 min
Cook time: 1 min
Total time: 2 mins
Serves: 1 serving
Ingredients
  • 1 egg
  • 1 egg white
  • 2 teaspoons olive oil or melted coconut oil
  • 2-1/2 tablespoons coconut flour
  • 1/3 teaspoon baking soda
  • dash salt
Instructions
  1. Whisk together the egg, egg white, and olive oil or coconut oil.
  2. Add the coconut flour, baking soda, and salt. Mix well.
  3. Transfer to a ramekin or coffee cup.
  4. Microwave on HIGH (100 percent power) for 90 seconds, or until cooked.
  5. Let cool a bit and enjoy

    I’ve never made a “paleo” bread before and was skeptical, especially in a microwave. I made the 2 minute muffin and was amazed! I can have bread for breakfast again, slathered in butter of course. And the whole thing is only 10 carbs! Amazing!
