Paleo Protein Pancakes

A lot of times when I get up in the morning and after I drink  cup of coffee, I start to crave pancakes. This happens almost every morning and while I know I should have eggs or sausage or something healthy, a fluffy stack of pancakes calls my name more often than I’d like to admit.

This is where collagen protein saves the day (or morning, at least). A couple scoops of this stuff added to my pancake batter yields super-fluffy pancakes that are full of breakfast-worthy protein.

I want to give a shoutout to Perfect Supplements here; they sent me their collagen protein to try and I’m really loving it. Besides adding it to my pancakes, I’ve been making homemade paleo candy with protein (coming soon!) and stirring it into my coffee. It’s grass-fed, comes in a really nice container, and has a very neutral taste – I’m a fan.

But the collagen doesn’t just add protein to the pancakes; it also actually makes the pancakes way fluffier! Which makes them absorb maple syrup and butter better. Yummmm….

Serves: 6-8 pancakes
Ingredients
  • 3 eggs
  • 1/4 cup almond milk or coconut milk
  • 3 tablespoons butter or [url href=”http://www.perfectsupplements.com/ProductDetails.asp?ProductCode=Coconut-Oil-16oz&Click=81115″ target=”_blank”]coconut oil[/url], melted
  • 1 tablespoon [url href=”http://www.amazon.com/Foods-Organic-Maple-Syrup-Bottle/dp/B005P0LW66/ref=as_li_ss_tl?ie=UTF8&keywords=now%20foods%20maple%20syrup&qid=1462033870&ref_=sr_1_1_a_it&sr=8-1&linkCode=ll1&tag=coituppa-20&linkId=5f7923626db20c1c8246188ee6f144da” target=”_blank”]maple syrup[/url]
  • 3 scoops (6 tablespoons) [url href=”http://www.perfectsupplements.com/ProductDetails.asp?ProductCode=PS-COLLAGEN&Click=81115″ target=”_blank”]Perfect Supplements hydrolyzed collagen[/url]
  • 1/3 cup plus 2 tablespoons [url href=”http://www.amazon.com/Organic-Coconut-Anthonys-Certified-Gluten-Free/dp/B00BSZBEAG/ref=as_li_ss_tl?ie=UTF8&keywords=anthonys%20coconut%20flour&qid=1462033880&ref_=sr_1_1_a_it&sr=8-1&linkCode=ll1&tag=coituppa-20&linkId=23a306f1d813105822b578f9afcc960d” target=”_blank”]coconut flour[/url]
  • 1/2 teaspoon baking soda
  • Dash salt
  • 1 tablespoon [url href=”http://www.perfectsupplements.com/ProductDetails.asp?ProductCode=Coconut-Oil-16oz&Click=81115″ target=”_blank”]coconut oil[/url], for cooking
Instructions
  1. In a mixing bowl, whisk together the eggs, almond or coconut milk, butter or coconut oil, maple syrup, and collagen.
  2. Add the coconut flour, baking soda, and salt; mix well.
  3. Melt the coconut oil on a hot greased skillet over medium heat.
  4. Cook the pancakes in 1/3 cupfuls until golden brown on each side and cooked through.

    do you know if this would work with gelatin? i have lots of this left at home

      I don’t think so because gelatin will really thicken the batter.
