I’ve been seeing all these amazing Valentine’s recipes all over the Internet. So I was like I have got to do a Valentine’s Day recipe! So here you go: red velvet cupcakes!

 

Paleo Red Velvet Cupcakes

Serves: 1 dozen
Ingredients
  • Cupcakes:
  • beet puree – 3/4 cup (made from raw beets)
  • blueberry juice – 2 tablespoons
  • eggs – 6
  • cream of tartar – 1 teaspoon
  • pure vanilla extract – 1 tablespoon
  • raw honey – 1/2 to 3/4 cup
  • cocoa powder – 6-8 tablespoons
  • coconut flour – 1/2 cup
  • blanched almond flour – 2 cups
  • baking powder – 2 teaspoons
  • Frosting:
  • cream cheese – 8 oz.
  • pure vanilla extract – 1 teaspoon
  • pure maple syrup – 1/4 to 3/8 cup
  • beet juice – few drops, optional
Instructions
  1. Preheat oven to 375 degrees Fahrenheit. In a large bowl, whisk together the beet puree, blueberry juice, eggs, cream of tartar, vanilla, and honey. Stir in the cocoa, coconut flour, almond flour, and baking powder. Divide batter between 12 paper-lined muffin cups. Bake for 23 to 25 minutes. Beat together the cream cheese, vanilla, and maple syrup. If desired, dye half the frosting with beet juice to make it pink. Frost cooled cupcakes as desired
