When a reader requested that I make a paleo spritz cookies recipe for the holidays, I had to at least try to make them; I can’t pass up a challenge! I racked my brain trying to remember what spritz cookies were like, remembering frosted butter cookies from childhood Christmas parties.
I think the cookies that I had at those parties were store-bought, because they tasted stale and I never liked them. This recipe is what a butter cookie should taste like – light and flaky and topped with frosting! These turned out so perfectly, as you can see…
So delicious!
And before you ask, no, those sprinkles are not paleo. Not even close. But they’re so pretty!!
- Cookies:

- Frosting:

- 2 tablespoons [url href=”http://www.amazon.com/gp/product/B000YF99GM/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000YF99GM&linkCode=as2&tag=coituppa-20&linkId=RDJZ4QBSFOEJG3QR” target=”_blank” rel=”nofollow”]coconut flour[/url]
- Preheat oven to 375° F.
- Grease a large cookie sheet with a little butter.
- In a mixing bowl, cream together the butter and coconut sugar.
- Mix in the egg, vanilla, and almond extract.
- Stir in salt and cassava flour.
- Use a cookie press to press the cookies in desired shapes onto the baking sheet.
- Bake for 6-10 minutes.
- Let cool.
- In a small bowl, mix together all frosting ingredients.
- Frost cookies and top with sprinkles if desired.

Great recipe! I didn’t have cassava flour, so subbed 3/4 cup of almond meal with 1/4 cup of buckwheat, and added 1/4 tsp of Xanthum Gum. The cookies are the color of buckwheat, but my kids and I liked them! Also took half the dough and added 1/8 cup of cocoa powder and mint extract (we didn’t use the almond extract). And those were a big hit! Thanks for the recipe!

Heather, I was thrilled to come across this recipe as spritz cookies were always my favorite growing up! I’m anxious to try your recipe, but I need to substitute the egg due to my recently discovered allergy. Do you have a suggestion as to what would work best? Thank you so much 🙂
