19 comments later, I was fairly surprised by the results: I was expecting everyone to ask for pizelles or or something really fussy like that. But what everyone really missed was a good old-fashioned paleo sugar cookies recipe! Here’s a tally of the top three cookies:
Sugar cookies: 8 votes
Molasses cookies: 5 votes
Gingerbread cookies: 2 votes

Of course, people wanted frosting with those paleo sugar cookies, and the traditional powdered sugar, milk, and butter mixture that I grew up on wouldn’t live up to the paleo standard.
My work cut out for me (pun intended!), I headed to the kitchen. The result? A super-simple paleo sugar cookies dough that is easy to make, requires no chilling, is easy to cut, and bakes into perfect cookies. You’re welcome.
And of course no cookie recipe would be complete without frosting. My recipe is sweetened with only 2 tablespoons of maple syrup! Gone are the days of recipes calling for a billion cups of powdered sugar!
- Cookie Dough:
- eggs – 2*
- coconut oil – 1/3 cup, melted
- honey or maple syrup – 1/2 cup
- pure vanilla extract – 1 tablespoon
- blanched almond flour – 2 cups
- coconut flour – 1/2 cup
- tapioca flour – 1 cup
- salt – 1/2 teaspoon
- baking soda – 1/2 teaspoon
- Frosting:
- coconut oil – 1/2 cup
- tapioca flour – 1/3 cup
- coconut flour – 2 tablespoons
- honey or maple syrup – 2 tablespoons
- pure vanilla extract – 1/2 teaspoon
- Toppings:
- chocolate chunks
- chopped macadamia nuts
- Preheat oven to 350 degrees Fahrenheit and and grease 2 cookie sheets with coconut oil.
- In a large mixing bowl, combine the eggs, oil, maple syrup or honey, and vanilla. Whisk together.
- Stir in the flours, baking soda, and salt.
- Dust the dough as needed with coconut flour as you roll in out, cut cookies as desired, and place on cookie sheets.
- Bake for 10-13 minutes.
- Transfer cookies to a platter and cool for about 20 minutes in the freezer while you make the frosting.
- Stir the frosting ingredients together.
- Frost cookies, top with chocolate chunks and macadamia nuts.
- *For egg-free, substitute 1/2 cup unsweetened applesauce for eggs. May need to bake cookies a bit longer.
