Pumpkin Fudge | Cook it Up Paleo


I am obsessed with all things pumpkin these days.  Can I just eat pumpkin for every meal? So delicious, and so many ways to use it too.

I am also a total chocolate lover.  Especially dark chocolate.  So I decided mixing pumpkin and chocolate couldn’t be a bad idea.  I was right.

This pumpkin fudge is really rich and flavorful.  Decidedly chocolaty with pumpkin and spice undertones, it’s quite an experience.  My very picky dad says this is the best fudge I’ve ever made.  And I’ve made a lot of fudge.

Pumpkin Fudge
Recipe Type: Cookies/Bars

Prep time: 10 mins
Total time: 10 mins
Serves: 1 8 inch pan
Ingredients
  • dark chocolate chips – 1 cup
  • coconut oil – 1/2 cup
  • pure pumpkin puree – 1/3 cup
  • pure maple syrup – 3 tablespoons
  • pure vanilla extract – 1 teaspoon
  • ground cinnamon – 1 teaspoon
  • kosher sea salt – for sprinking
Instructions
  1. In a small saucepan, combine all ingredients except for salt.
  2. Heat on medium heat, stirring, until just melted. Remove from heat and pour into an 8×8 inch glass baking dish.
  3. Sprinkle with some kosher salt.
  4. Freeze for about 15 to 20 minutes, or until set.
  5. Cut into squares and store in the fridge.

    Please include me in your recipe e-mail list. I have celiac. I became sick with severe flu like symptoms that were not going away after 4 weeks. About a week ago the immunologist told me he feels I have lupus, more testing will be needed. The medication for lupus are horrendous. So I am on day four of an aip food lifestyle. Your work, recipes, blog and dedication are amazing! Thank you for this excellent site:)
